Crunchy Baked Fish Sticks

CRUNCHY BAKED FISH STICKS

INGREDIENTS

  • 1 lb cod loin, ~1in thick (thawed if frozen)

BREADING: - 1/2 c panko breadcrumbs - 2 tsp Old Bay seasoning - 2 tsp dried parsley - 1 tsp paprika

EGG WASH: - 2 lg eggs - 2 tsp spicy brown mustard - 1/4 tsp black pepper - juice of 1/2 lemon

INSTRUCTIONS

  1. Preheat oven to 400F. Line baking sheet w/ foil, spray w/ cooking spray.

  2. Pat fish dry. Cut into sticks ~2in long x 1in wide.

  3. Mix panko, Old Bay, paprika, parsley in a shallow plate.

  4. Whisk eggs, mustard, pepper, lemon juice in a bowl.

  5. Dip fish in egg mix, turn to coat. Roll in panko mix, press crumbs to stick.

  6. Place on baking sheet. Spray tops lightly w/ cooking spray.

  7. Bake 15-20 min until golden and cooked through.

  8. Serve immediately w/ tartar sauce.

NOTES

  • Use loin cut, not fillet (thicker).
  • Haddock or halibut also work well.
  • Don't overcook! Fish gets rubbery.
  • Don't make too far ahead; breading gets mushy.
