Hamburger or Hot Dog Buns
HAMBURGER OR HOT DOG BUNS

INGREDIENTS
- 2 Tbsp (25g) granulated sugar
- 4 1/2 tsp (14g) instant or active dry yeast
- 1/2 c (113g) warm water (105-115F)
- 2 c (454g) warm milk (105-115F)
- 2 Tbsp (27g) vegetable oil
- 2 tsp table salt
- 6-7 1/2 c (720g-900g) all-purpose flour
- 1 lg egg beaten w/ 1 Tbsp water (egg wash)
- sesame, poppy, caraway seeds or coarse salt, optional
INSTRUCTIONS

Dissolve sugar then yeast in warm water in lg bowl. Add milk, oil, salt, and 3 c (360g) flour. Beat vigorously 2 min.

Add flour 1/4 c at a time until dough pulls from sides of bowl.

Turn out onto floured surface. Knead until smooth and elastic. Use bench knife if needed.

Place in oiled bowl, turn to coat. Cover w/ damp towel. Rise until doubled, approx 1 hr.

Turn onto lightly oiled surface. Divide into 18 pieces (thirds, then halves, then thirds).

Shape into balls. Hamburger: flatten to 3 1/2" disks. Hot dog: roll into 4 1/2" cylinders, flatten slightly.

Soft buns: place 1/2" apart on baking sheet. Crisp buns: place 3" apart.

Cover, let rise until almost doubled, ~45 min.

Preheat oven to 400F. Brush tops w/ egg wash. Sprinkle seeds if desired.

Bake 20 min until internal temp reaches 190F.

Remove to wire rack to cool. Split and toast before serving.
NOTES
Dough should be slack -- add only enough flour past 6 c to make it just kneadable.
