Cheese Straw

INGREDIENTS
- 1 2/3 c flour (7 1/8 oz), plus more for work surface
- 1 1/4 tsp dry mustard
- 1 tsp kosher salt
- 1/4 tsp cayenne pepper
- 8 oz extra-sharp cheddar cheese, grated (2 1/2 c)
- 1/2 c unsalted butter (4 oz), softened
- 2 Tbsp water
INSTRUCTIONS

Preheat oven to 425F. Sift flour, mustard, salt, and cayenne in a medium bowl.

Beat cheese and butter in a stand mixer until blend/spread, about 2 min. Reduce speed, beat in flour mix. Add 2 Tbsp water, beat until dough comes together, about 1 min.

Turn dough out onto floured surface, knead 5 times. Place dough on parchment paper, roll into 12-x9-in rect (1/4 in thick).

Slide to baking sheet, refrig until cold (15 min).

Line two baking sheets with parchment paper. Cut dough in half crosswise, and cut each half into 6-in long, 1/4-in wide strips.

Transfer strips to prepared sheets, spacing at least 1/2 in. Wiggle dough strips gently to create a slightly curvy shape.

Bake in preheated oven, one sheet at a time, until cheese straws are golden brown and crisp, 12 to 14 min.

Let cool on baking sheet 10 min; transfer to wire rack to let cool completely, about 15 min.
